Dimock Dairy Co-op, located in the heart of pheasant country (about 15 miles south of Mitchell, SD), has become for many of my hunting friends an annual stop during pheasant hunting season. Dimock is the oldest cheese plant in South Dakota, opening its doors in 1931 and is still making their cheese by hand! Maybe it's the cold weather and walking through fields, or maybe it's just that their cheese is that good, but no trip to SD is complete without a visit.The very friendly staff is knowledgeable and quite happy to offer samples of their wide-variety of hand-made cheeses. Personal favorites are bacon & onion cheddar, habanero, pepper-jack, pepperoni, and their hard cheddar. Equally appreciated - they ship!
